New Stands for Poultry Meat will be Established in Ukraine
As of 2016, new standards, highest limit of water content for poultry carcasses, will be established in
Ukraine, which will be on the basis of cooling method.
According to the No. 694 document of Ministry of Health, different norms are suitable for different pre-chilling ways. For air chillier, the content of moisture should not exceed 1.5%; Spray cooling and water chilling are no more than 3.3 % and 5.1%.
The maximum amount of moisture was set by Ministry of Agrarian Policy and Food previously, which was 4% from the total weight of poultry carcass, but it was not supported by Ukrainian producers
Alexandr Bakumenko, the head of the Poultry Union of Ukraine, said that the new standards to be entered from 2016 will meet the requirements of the EU. Producers still have time to adjust and upgrade their original processing method to meet the new standards.
